This coffee was grown by Javier Rubio at the farm El Libano at an altitude of 1600 – 1650masl which has an average temperature of 18-23c and an annual rainfall of 1700 – 2200mm. The coffee is harvested following strict ripeness criteria, floated and hand sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. This microlot is 100% Yellow Bourbon. The name Bourbon was given after an island now called Reunion, off the coast of Madagascar.
